Dinner AND meal planning for my lunches!

I’ve been honestly being more conscious in my life, what I am eating, why, how do I feel etc. This also includes eating more seasonal. The kids naturally shift in the seasons as well.

Tonight I cooked up 2 sheet pan dinners! With peppers, sweet potatoes, mushrooms, parsnips, kale and then remembered after it was done to add feta cheese on top! Which was still delicious. To the oil mixture I added 1 drop of each of the cuisine blends, awesome flavour!!! Baked in the oven for about 45 min. Now I’ve got left overs to throw over a bed of quinoa for a “bowl” lunch! My FAV because I prefer to graze when I eat, vs sitting and eating in a certain time frame. I also love easy throw together, flavour packed lunches!!! Last week was a slightly different blend of veggies, this week is more FODMAP friendly!

Bonus… sheet pan cooking is SO simple to clean up! 🙌
